Medium body with fresh minerality thanks to our volcanic soil and notes of red fruits like sweet cherry, wild strawberry, and raspberry, with a sharp, mouthwatering acidity.
Recommended Pairings:
This is a versatile sparkling rosé that goes great with pizza, pastas with rich sauces like carbonara, seafood, and Asian foods.
In the Cellar:
Sangiovese grapes are directly pressed after harvest while Montepulciano grapes are macerated for up to 48 hours and then pressed off the skins.
Musts are then combined and partially fermented together in fiberglass tanks then bottled and the fermentation finishes in the bottle (ancestral method).
