Description:
Light to medium body with a lush red color, low acidity and mellow tannins.
Fruity and intense aromas with juicy notes of black cherry with hints of strawberry and pomegranate.
Recommended Pairings:
A highly drinkable red that does well on its own but can also be paired with charcuterie boards, fresh pastas, legume dishes, medium seasoned cheeses, and white meats.
In the Cellar:
About a third of the ciliegiolo grapes underwent carbonic maceration for 3 weeks, then finished on the skins in fiberglass tanks where they aged for six months.
The remaining two/thirds of the ciliegiolo and small percentage of Sangiovese were fermented with the skins on in fiberglass tanks, then pressed and aged in old oak barrels for six months.
Blended and bottled in March.
